Resepi Kailan Ikan Masin

This dish holds a dear memory to me. Lemme tell you a story behind it. We as a family rarely went out for family dinner as we cannot afford it, with 9 members in the family and all, so we enjoyed home cooked meal all the time.

But my father does sometimes tapau from a nearby restaurant/kedai and one of his most fav dishes to order is this kailan ikan masin alongside tomyam ayam and telur dadar. It's funny because we can just cook all this dishes ourselves but maybe sometimes he wants to treat my mom a bit from cooking. So we all gathered around on the floor and shared our-simple-meal-but-full of-laughter-because-we-always-berebut together.

Now, since my siblings are all growing up already, we do tend to eat out especially when my father took me to visit my sister in Penang. And he still order the same dishes : tomyam ayam/campur, kailan ikan masin and telur dadar. Hahaha. Ok, this post brings tears to my eyes already, let's onto the recipes. Let's go!

Bahan-bahan:

1 cekak sayur kailan

1 kerat isi ikan tenggiri masin yang dipotong kecil (about a spoonful)

1 biji bawang besar (dihiris halus)

2 ulas bawang putih (dicincang halus)

1 biji cili merah (dihiris menyerong)

2 camca besar sos tiram

1/2 cawan air

Sos ikan secukup rasa

1) Cutting session

I usually went to kedai runcit and there is already a raw cut of ikan tenggiri masin ready if not you had to cut it from scratch. Make sure to cut it into small pieces or according to your preferences. For the kailan, one tip is to ensure that you also used the stalk part where it's usually hard. Just cut where the leaves end and peel the skin of the stalk like carrots. And cut it in a 'serong' position.

2) Menumis

Ok, now is tumis session. Put the onion and garlic inside and fry until it turns yellow. Add some oyster sauce and ikan tenggiri masin before adding a little bit of water. Lastly after the sauce was well mixed, add the kailan starting from the stalk part and then the leaves part (very important because the stalk takes time to cook). Add just a teaspoon of fish sauce because we already have oyster sauce and ikan tenggiri that are salty already. Add the remaining water and mix well. Now it's ready to serve.

3) Decoration

Just scoop the desired amount and add some chilies on top for added spicy flavour. I prefered the raw chilies but you can cook them too if you want. Just add them alongside the kailan leaves. Enjoy!
